Running out of time in the morning? Me too! Recently, I stumbled upon the biggest time saver ever, the two minute omelet. Where has this been?
Omelets in the morning can take forever especially if you have kiddos to feed but this method has been life changing for our family. Grab a coffee cup, some eggs, cheese and peppers and you’re done!
Ingredients:
4 Egg Whites
Little Bit of Cheese
Little Bit of Peppers (even jalapeño if you live dangerously)
Salt & Pepper
Directions: Place the egg whites in the coffee cup and give it a little stir. Then, add in your remaining ingredients and feel free to customize. Mix them up a bit and pop it in the microwave for 2 minutes and 30 seconds.
That’s it! You have an easy omelet! I eat mine straight from the coffee cup but my husband cuts it up a bit and puts it in a tortilla. Either way, it’s delicious and you won’t have a huge mess to clean up!

That’s how I make my eggs. A very long time ago, I bought some egg whites. Ever since then, I’ve been using their microwavable instructions. I also spray some Pam cooking spray in my container so they come out easier. &, I cover it w/ a paper towel since sometimes it will pop. Lastly, I cook them in 30 second increments to avoid those popping sounds. (2 eggs equals 1:30. Course that depends on your wattage.) There’s nothing worse then having to clean your microwave from a splatter, eh?
