We have been talking all about getting healthy lately, why? Because it’s time. Time to stop the junk flowing into our bodies. I’m determined to eat healthy and in doing so, I have also had to change up what I’m making for dinner. I’m gluten free so I can’t do pasta anymore unless it is the overpriced gluten free version. But, I might have just found the best substitute on the planet, zucchini.
Yep, zucchini.
If you want to kick the pasta habit, this is your substitute. If you just want to find another way to eat your veggies, this works for that too. I made it originally because I ended up with a lot of zucchini in a produce basket a few weeks ago. Now, I”m craving it!

The recipe is simple and you can vary it up any way you’d like. For me, I just need the basics and I think it’s delicious. Believe me when I say, I’m never buying pasta again.
Ingredients: (Makes 2 servings)
3 Zucchini
Extra Virgin Olive Oil (just a little bit)
Salt
Pepper
Directions:
First, wash and prepare your zucchini. The first time I did this, I did not have the slicer above so I used a knife. It was dangerous, it did work but it basically gave me strips of zucchini rather than noodles. I’m telling you, the gadget above is SO worth it.
See how beautiful that is? My kids actually did those, it was THAT easy! Now, after the zucchini is prepared, get a pot of boiling water going on the stove. When it is ready, throw in the zucchini pasta and cook for about 5 minutes. Basically, it is just like spaghetti. Once it is cooked the way you like, drain out the water and place the zucchini in a bowl.
Then, simply toss with a little bit of Extra Virgin Olive Oil, salt & pepper to taste. I use Pink Himalyan Salt but you can use what you’d like. That’s it. It’s done and it’s AMAZING.
You can actually use spaghetti sauce if you’d like, this dish is so easy to work with and make your own. For me personally, I’m just keeping it simple. Have you tried zucchini pasta? Let us know what you think!
