Right now, the Broken Arrow & Fort Gibson Produce Gathering Co-op is open! You can order a basket of produce for only $15 plus, check out the delicious add-ons! This week, the co-op is offering steak fajitas, chicken fajitas, a guacamole pack and an assortment of local goat cheeses, goat’s milk, honey & eggs!

This has been one of my favorite local finds, in fact, I liked it so much that I bought the business back in October of last year. I am passionate about eating healthy and saving money, this is a tangible version of just that. We’re bring the healthy foods to you in an affordable manner that’s fast and easy for your family.

Pick up is this Saturday for Broken Arrow at 8am at 1201 N. Elm in the gym in the Legacy Christian Academy (Northside Christian Church) parking lot. The pick up for Fort Gibson is also this Saturday at 9am in The Rock building off Poplar.

Homemade Pie in a Jar

Pie in a Jar is something I make several times a year for school auctions, teacher gifts or just by request. Hands down, this has been the most popular post on our site over the last few years. My friend and long time MSQ volunteer, Brandi, made Pie in a Jar for me a few years ago and I’ve been making it ever since.

It is amazing.

Now that I’m gluten free, I’ve had to be a bit more creative with a version for myself but did find that the Pillsbury Gluten Free Pie Crust worked as a great substitute.

Seriously, if you decide to make it, buy enough to make yourself some as well. You will love it. Your kids will love it. Your spouse will love it. The neighbors will love it, you get the point.

What You’ll Need:

Small Mason Jars
Pillsbury Refrigerated Pie Crust
Canned Pie Filling of Your Choice

Directions:

First, grease/butter jars and set aside. Then, roll out the dough, you can make it thinner if you’d like. Using the lid of a jar, cut out a circle in the dough and place it at the bottom of the jar.

Cut the remainder of the strips vertically and place them around the jar allowing the top to slip over a bit. Then, add the pie filling but only about 2/3 full because it will expand as it cooks.

Once filled, crisscross the crust across the top like the picture above. Bake at 400 degrees for about 35 minutes. You can cook them on a cookie sheet, it is easier to place the sheet in the oven then place the jars on top.

Once cooked, serve warm with ice cream! YUM!

Quick & Easy Marshmallow Bar

My son has multiple food allergies but that doesn’t mean he can’t have fun snacks and treats, it just takes a bit more creativity. This weekend, I decided to try something new! I melted Enjoy Life Dark Chocolate then, let the kids dip marshmallows into the chocolate. I had a muffin tray full of toppings to choose from that they were able to dip their chocolate covered marshmallows into and enjoy.

It’s fun and it was super delicious!

For us, I chose allergy free sprinkles, chocolate, smarties and other toppings that were safe for my son’s food allergies. But, you can get as creative as you’d like! We even threw some jellybeans in there too.

Ingredients:

1 Bag of Enjoy Life Dark Chocolate (or whatever brand you prefer)

1 Bag Large Marshmallows

Lollipop Sticks (I got these at Hobby Lobby)

Toppings (sprinkles, smarties, mini chocolate chips, etc)

Directions: I think it is much easier to put the toppings in a muffin tin than to sit them out on the counter. This kept the mess contained so first, assemble your toppings. Then, melt the chocolate for 2 minutes in the microwave. While it is melting, place the large marshmallows onto lollipop sticks. Once the chocolate has melted, you can dip your marshmallows into the chocolate then the toppings. YUM!

How to Freeze Avocados

I tried avocados for the first time this summer simply because I wanted to add something new to my diet. Honestly, I always just assumed I would hate them, turns out, I LOVE them. Now, I eat them for breakfast on top of my gluten free toast. Yep, it’s amazing.

That being said, they can be pricey so I love stocking up when I find a good sale. A new Sprouts just opened by my house and the big avocados were only $1 so I loaded up and quickly learned how to freeze them so I can enjoy them for months. It’s really not that hard at all! There are two main methods of freezing, use the one that works best for you.

Method #1 Freezing Avocados in Slices

Simply wash and peel the avocado slicing the middle. Squeeze a bit of lime juice over the slices to keep them from turning colors. Then, place the slices in a freezer bag and you’re done! Yep, that’s it.

Method #2 Freezing Mashed Avocados

Scoop out the middle of the avocado and add to either a bowl or in my case, I put it in the KitchenAid mixer. Add in as much as you want to freeze, adding about 1/2 of a squeezed lime per each avocado. Again, the lime helps it from turning colors and if you’re going to make guacamole later, it’s perfect for that too! Then, turn on your mixer (either the KitchenAid or use a hand mixer) to mash the avocado to the desired consistancy.

Once well mashed, simply add to freezer bags and freeze. That’s it!

This weekend, our produce coop, The Produce Gathering, also offered up avocados! I can’t wait to freeze them!
